Dear Friends,
Twenty years ago, we opened the doors to Gallagher’s with a simple vision: to create a family-run destination restaurant that serves wonderful food.
Thanks to you - our loyal guests, friends, and extended family - that dream became something far greater than we ever imagined. The community, from Waterloo locals to those who’d travel from St. Louis and beyond and stand in line for our Sunday Fried Chicken, welcomed us with open arms. We are forever grateful for your support.
As you may have already heard, we’ve started the process of handing the reins over to new owners. It’s not a decision we made lightly, but we felt the timing was right and we are inspired by what Matt & Jami plan to bring to our community.
As we close this unforgettable chapter and step away from our roles as owners, we do so with full hearts and deep gratitude. Gallagher’s will always be a part of us - and of Waterloo. Our family, from John and Susie down to the grandkids, have so many fond memories in this building and in the Waterloo community.
PS - We’re still open, so come enjoy a meal or drink with us before the full transition. And if you have any questions, stop by or give us a call. We don’t have all the details, but everyone involved is committed to making the transition as smooth as possible.

A message from the new owners, Matt & Jami:
Today was a big day for Hines Hospitality Group. Geno’s Trattoria & Chophouse was born, it will be a 2nd sister location of Roberto’s Trattoria & Chophouse. Jami & I have been on a long hard search for the perfect spot to expand what we do.
We signed a lease to take over Gallagher’s in Waterloo. Jami and I have fallen in love with the Waterloo and Columbia area! The people and atmosphere are INCREDIBLE! We want to thank the Gallagher’s for choosing us to carry out their family’s long-standing history in these great little towns.
We are committed to giving this beautiful building an identity of exceptional service, elevated food and a wonderful all-around dining experience. We are looking to provide menu options for everyone at different price points. We look to be active and supportive in these communities.
Gallagher’s will continue to operate as usual until the rebrand takes place. We will also continue to honor Gallagher’s gift cards. We will provide the help Gallagher’s needs so that everyone can continue to enjoy what the restaurant has to offer.
